During one of my trips to the farmer’s market I came away with a bounty of goodies. The zucchini I purchased never made it to the breads and cakes that were my original intention but something just as good. This Zucchini Sweet Potato Frittata served as breakfast, lunch and dinner for a few days. Frittata, which is an egg based dish translates to “fried” in Italian. It bears similarities to an omelet, and a crustless quiche.
I didn’t use a specific recipe, just a method. Sometimes I like to fly by the seat of my pants and toss in what’s available and what sounds good. That being said there are some rules/helpful hints to keep in mind when making a frittata.
Use full fat dairy for creaminess and to up the ante on the flavor factor. Naturally you will need some eggs but keep them in proportion to the dairy. I used six and ¼ cup of half and half. The sweet potatoes and Italian sausage that I used were already cooked. Combining the raw eggs and dairy with uncooked protein and raw sweet potatoes and zucchini would have been a disaster. Uncooked zucchini would have released too much water into the dish so I gave it a quick sauté.
There is one ruled I fudged a bit on and it’s how long I baked it. When it comes to eggs we are a house divided. The Mr. says you can bounce my cooked eggs off the wall and he likes his way too gooey. I understand that eggs will continue to cook a little after they are removed from the pan but if the texture is not firm I can’t eat them.
In addition to the zucchini, sweet potatoes, and Italian sausage, I added shredded sharp cheddar cheese, sliced green onions, plus minced green and red peppers. I served my frittata with lightly toasted sourdough bread and blueberry jam. This is a dish that would be great on a brunch menu along with potatoes, fresh fruit and of course a few pastries.
