This was the surprise dessert of the event. One of the ladies commented on it but I was totally under the spell of the chocolate cake and I didn’t taste it until the next day. It was light in texture and deep in taste. Not wanting to have too many leftovers I only made 10. I billed this as a “shot” but it was way more than that. Had I actually made them shot size there would have been more. I’ve told you many times before that I adore all things white chocolate and I couldn’t imagine having a dessert buffet without any. The original recipe that I found on cooks.com called for a raspberry sauce. The original recipe is here
Even though I think White Chocolate and Raspberries is one of the coolest combinations on the planet, I sacrificed the raspberries this time and used a cheesecake and white chocolate instant pudding. Don’t judge, time was of the essence. I can’t wait to make this again and when using instant pudding the flavor combos are almost endless. To take it to the next level you could even add a garnish or two or three. Or a splash of your favorite liqueur.
White Chocolate Mousse – Adapted from Cooks.com
7 oz. white chocolate
10 oz. heavy cream
4 egg whites
1/3 cup sugar
1 4oz pkg Instant White Chocolate Pudding
1 4oz pkg Instant Cheesecake Pudding
4 cups 2% milk
Melt chocolate in double boiler; set aside. Whip cream until stiff; set aside. Clean beaters. Whip egg whites and add sugar slowly to form stiff meringue. Add chocolate to meringue slowly. Fold chocolate meringue mixture into whipped cream; chill. While mixture is chilling prepare instant puddings according to package directions. No need to do them separately, they’re all going down together. When mixtures are chilled and set alternate them in layers in the prettiest glasses you can find. Unless of course you’re making more than a couple then you may have to resort to something a bit more practical like plastic short tumblers. Hey when my ship comes in, it’s crystal glasses all the way. Makes 10 8 oz servings.
