When my kids were little they did their best to try and surprise me with breakfast on Mother’s Day. However, I was always the first one up in the morning, and I still am. I never expected them to be up at the crack of dawn to prepare breakfast for me and it’s the thought that counts. Also, with five kids, going out to brunch wasn’t the most economical choice.
If you or your fam don’t want a full breakfast or choose to skip the restaurant scene, here’s an even simpler option, let the bakery department at your favorite grocery store do all the work for you. This has always been enough to satisfy all of us until the Mr. manned the grill later in the day for dinner.
Since Gabbi was a little girl I’ve always helped her put together something nice for her Mom on Mother’s Day. A few days ago, we had a practice session and this is what we put together. We took a thrift store basket, lined it with parchment sheets and filled it with a few things we knew her Mom would like. Glazed and sour cream doughnuts, blueberry muffins and buttery croissants. We also added some of that Raspberry Jalapeno spread leftover from the Charcuterie Board. All of this topped off with a hot beverage tops our list for easy Mother’s Day Breakfast Ideas.
In addition to, or instead of the pastries, breakfast casseroles are always a winner. A casserole gives you tons of options and is an easy way to get your protein, carbs and even a few veggies in one dish. Take for instance this Chicken and Cheese Breakfast Casserole
or this Zucchini Sweet Potato Frittata
