There are so many components to this frosty treat that it’s almost dizzying. I gave up on trying to fit them all into a title, it just wasn’t working. Two quick things I want to point out.

  1. This is so decadent you’d need GPS to find your way back to a healthy treat.
  2. If you don’t want to share it, pace yourself; have some now and pick up where you left off later.

Hopefully, I haven’t scared you off because this is worth every single calorie and fat gram.
Other than making super indulgent treats, I’m guilty of subscribing to magazines and not reading them. Most of the time if the cover catches my attention I keep going.

The July cover of Family Circle Magazine held my attention for a long time. I couldn’t stop staring/drooling over the 3 floats on the cover. The title on the mag is, “Best of Summer, Great Burgers, Grilled Fruit Ice Cream Floats & More”.

As I’ve said many times before cake is my all-time favorite dessert. Ice cream is OK but doesn’t make my heart go pitter patter. On the other hand, the Mr. would rather have a root beer or coke float. Opposites attract. After looking at the three floats on the cover of the magazine I did a bit of research to see what paired with cherries because I had plenty on hand. When checking my inventory I also found vanilla ice cream, almonds, whipped cream, and Amaretto.

The first site I landed on was The Flo Show. It lists everything from fruits to herbs that would pair with cherries.

How the Cherry Almond Float with Amaretto Peaches Came Together

From there the wheels started turning. I didn’t want to use coke for the float although it would be perfect with the cherries. I also discovered white chocolate in my baking stash and decided to dip the cherries in white chocolate for garnish.

I also pitted and finely chopped a few more to layer with the rest of the ingredients. Thanks to my OXO Cherry Pitter for making that task easier. To give the almonds a bit more crunch and sweetness, I made a quick almond brittle. One peach was peeled, chopped and macerated in Amaretto for 30 minutes. To top it off I chose cream soda to tie all the flavors together.

If you’ve ever photographed ice cream before you know there’s not a nary minute to waste. The props had to be in place and ready to go. Thankfully, it went smoothly. When the shoot was over I didn’t clean up or put anything away. The only thing on my mind was diving into my icy concoction.

Ice cream may not be my favorite treat but this bad boy was GOOD! Needless to say, I couldn’t wait to dive in. I may have eaten a half cup before I tapped out. I also had every intention of taking a skillfully styled picture of the float half eaten with a cherry or two left behind. Obviously, that didn’t happen. The rest went into an airtight container and placed in the freezer right away before I could even think about eating more. It’s still there waiting for me to finish what I started. Yes, there are several steps to making this over the top ice cream float, but if you’re going to indulge you might as well go all out.

Cherry Almond Float with Amaretto Peaches

This Cherry Almond Float with Amaretto Peaches is one of the most decadent ice cream treats I’ve ever had and it’s worth every calorie and fat gram.
Ingredients
  • 3 scoops Vanilla Ice Cream
  • 4 Cherries (with stems) dipped in White Chocolate (optional)
  • 6 Cherries, pitted and chopped
  • Almond Brittle
  • ⅓ cup sliced almonds
  • 2 TBS Butter
  • 3 TBS sugar
  • 1 Peach, peeled, pitted and finely chopped
  • ¼ cup Amaretto
  • 6 ounces Cream Soda
  • Whipped Cream for Garnish
Instructions
  1. Place peaches in a small bowl and cover with Amaretto for at least 30 minutes, then drain and set aside.
  2. Save the Amaretto for adding to cake batter or making a simple syrup.
  3. For the Almond Brittle
  4. In a small skillet over medium heat melt the butter and then add sugar, stirring constantly.
  5. Once the sugar and butter start to bubble add the almonds and keep stirring.
  6. When the mixture starts to turn brown remove from the heat, if it cooks too long it will burn.
  7. Spoon the almond mixture onto wax paper to cool.
  8. Once it has cooled, break it into small pieces.
  9. Assemble the Float
  10. In a tall glass add one scoop of vanilla ice cream followed by a scant spoonful of peaches then almond brittle.
  11. Add another scoop of vanilla ice cream followed by another scant spoonful of the cherries then almond brittle.
  12. For the last layer, add the vanilla ice cream, a bit more of the fruit followed by more almond brittle.
  13. Garnish with whipped cream, the White Chocolate Dipped Cherries and any remaining almond brittle and chopped fruits.
  14. Pour the cream soda over the top, insert a straw, have a spoon on hand and enjoy.
Notes
The cooking time does not include the 30 minutes of soaking the peaches in Amaretto.
