This Chocolate Crinkle Sandwich Cookie Post is an update to the original about why it’s important to take inventory of supplies you have on hand.
In my last post I talked about my ideal job being one where I could travel and discover unique eats and sweets to sample (of course) and to share with all of you. After going through my cupboards I’ve discovered some items that I’ve squirreled away that should be used before they expire. These Chocolate Crinkle Sandwich Cookies started with one of those items.
These little gems are often little known brands that jump into my cart and others that are marked down so low that I can’t resist their siren call. In tablescaping and home décor we often talk about shopping your home before you buy anything new for your tabletop, coffee table, etc. It seems that I may have to heed that advice in regards to baking also.
After a nearly three month layoff naturally I want to go on a baking supply shopping spree but the sensible thing is to use what I have before I have my way at the stores. Of course there are a few staples that always have to be replenished like, butter, flour and sugar. I opened my cabinets to find lots of baking chocolate, nuts, fondant, lots of tiny bottles of liquor (for flavoring wink-wink), gluten flour (really?), candy, and several boxed mixes that I barely remember buying.
Scratch baking is deeply rooted in me so rest assured that the sweet treats that come from my kitchen won’t all be from a box or a mix.
I’m pretty sure that I had our youngest daughter Charisse in mind when I picked up a box of Chocolate Crinkle Cookie Mix. It’s her favorite cookie and she’s been asking for them for a long time. Wanting to make these a bit more special I hacked them by sandwiching them between some deep dark Chocolate Buttercream frosting. Using a cookie scoop to measure out the dough helps in keeping the size the same. The mix, eggs and oil only took a couple of minutes to combine and another 12 minutes to bake. Baby girl was very happy. Her birthday is next week so there’ll be a powdered sugar haze all over the kitchen.
