This Chocolate Crinkle Sandwich Cookie Post is an update to the original about why it’s important to take inventory of supplies you have on hand.
While shopping I often find a few little-known brands that jump into my cart and others that are marked down so low that I can’t resist their siren call. In tablescaping and home décor we often talk about shopping your home before you buy anything new for your tabletops or home decor. It seems that I may have to heed that advice in regards to baking.
Last year I was out of commission due to a broken ankle. While not as devastating, my Plantar Fasciitis has been giving me the blues lately. In the last year, I’ve had to wear the boot and use crutches at least four times and it’s working my last nerve. So far, icing, Ibuprofen, and stretching don’t provide long term relief. I am seeing a podiatrist and have started a round of cortisone injections. I’m not crazy about them but I don’t want to have surgery either.
After being out of commission, I have tons of ideas/recipes that I’m determined to dive into as soon as I can. Common sense dictates that I put on my creative thinking cap and use what I have. Well that just isn’t happening right now. During the two-day window, I had this week I ventured out and bought enough baking supplies to keep me in dessert heaven for at least four months. I was like a kid in a candy shop on my baking supply shopping spree. When it came time to put away my bounty reality sunk in. There is very little room in my cupboards for anything.
I opened my cabinets to find lots of baking chocolate, nuts, fondant, tiny bottles of liquor (for flavoring wink-wink), gluten flour (really?), candy, and several boxed mixes that I barely remember buying. These items must be used before I use anything else. Thank goodness for cool dark places in my basement. Into bins my sweet stash went, along with a list of what’s inside and when I bought them.
On my trip back upstairs I felt that familiar but treaded twinge in my foot alerting me that a relapse was ahead. I had two days of mobility bliss and here I am right back where I started, sitting on the sidelines. I admit that my getting out and about was probably too much too soon. Being out of the constraints of the boot and crutches was exhilarating and now I’m paying the price. Luckily, I seen the podiatrist again on Monday.
I’m pretty sure that I had our youngest daughter Charisse in mind when I picked up a box of Chocolate Crinkle Cookie Mix. It’s her favorite cookie and she’s been asking for them for a long time. Wanting to make these a bit more special I hacked them by sandwiching them between some deep dark Chocolate Buttercream frosting. Using a cookie scoop to measure out the dough helps in keeping the size the same. The mix, eggs and oil only took a couple of minutes to combine and another 12 minutes to bake. Baby girl was very happy.
