After making the Sweet Potato Baby cakes, I was left with about 2 cups of batter. Not enough for a baking bonanza. However, one eight inch layer was enough for me to practice with the some stainless steel baking rings I hadn’t used. Rummaging through my cupboards I also found a can of coconut pecan frosting. Sweet Potato Cake with coconut pecan frosting definitely works for me. Served with a scoop of French vanilla ice-cream drizzled with caramel and fudge sundae sauce. Oh my dentist is going to love me!
