How was your Easter? I hope it was as relaxing as mine. The weather was picture perfect perfect with lots of sunshine and temps in the high 60’s. Dinner at Chari’s house was divine and there was so much food! I think she picked up the trait of cooking for a crowd from me. Easter week was quite a whirlwind of activities, now let’s see how quickly April flies by. Already my wheels are turning towards Cinco de Mayo festivities and of course Mother’s Day.

There is one more Easter related dessert that I want to go over with you and it’s the Stuffed Chocolate Cake Truffles. I shaped the cake truffle mixture around chocolate covered cherry cordials. These were so good and I just want to give you a peek inside in case you were wondering what they looked like.

When Samara sent her elaborate cookies she also included two cookie cups and the stuffed truffles nestled inside them beautifully. I am already going over ideas on what else I can stuff them with and welcome any suggestions you may have.

  2. I've been waiting for this cake truffle post, Sandra! I thought I was the only person in the world who LOVES chocolate covered cherries. All your photos are beautiful, but that second one with the syrup oozing out of the cherry is a killer! I think I'm going to have to make these for myself for Mother's Day! : )
    • You definitely deserve to treat yourself! The kind of sad part about those stuffed truffles is that I have two boxes of chocolate covered cherries that I didn't use and they keep staring at me. Whatever shall I do with them?
