What a weekend! Had I not been glued to the TV watching news of Hurricane Irene, I may have accomplished more, sooner. At any rate I hope our east coast neighbors will recover quickly and my thoughts and prayers go out to those that have lost loved ones.
The Mr.’s family also had a family picnic on Saturday which was an all day event. It was so much fun to meet family new family members and for once to just be a guest. I didn’t have to fix anything but my plate! Of course I over critiqued the caterer’s entire menu; couldn’t help it. Our son that lives in Indiana came home for the festivities and of course I had to make a cake. We surely didn’t need it because we were still full from Charisse’s birthday. On top of that I had a special order for two dozen cupcakes and I was getting everything ready for classes that start tomorrow. Whew!!!!
The one thing that I had intended to do was post about the Birdseye Steamfresh Chefs Favorite Creamed Spinach that I received as part of the Foodbuzz Tastemaker Program. I decided to use the Creamed Spinach in a hot dip. I guess it was more like a quiche seeing that it was served in a piecrust. It was the classic spinach and artichoke dip, this time topped with bacon. And we all know everything is better with bacon. I had enough ingredients to make two and of course I sent one to work with Charisse. She said it was devoured immediately. I take that as a good sign.
