The semester is almost over, Praise the Lord!!! From students cheating, not turning in their assignments, and texting in class, I am all in. Teaching at the community college has it set of challenges but I do love what I do. In addition I have to say that I do have some students who are honest, work hard, are there to learn and I thank them. One of the greatest rewards in teaching is being present when you a student as an “aha“ moment. Still and yet, I‘m tired and ready for the semester to end, and vacation to begin. This is a short semester, we’re cramming 15 weeks of work into 7, which means there is no time to tarry. In a nutshell, I’m feeling stressed.
I’m looking forward to lazy hazy days of blog hopping and baking some over the top and of course healthy sweet treats and meals. I intend to savor the sunshine, not whine much about cloudy and cooler days, and dive headlong into chillaxation. So this morning was a preview of my extraordinary summer. I wanted something different for breakfast, other than my green drink and veggies with cheese. Hey don’t knock it until you’ve tried it! Other than tasting an occasional piece of cake when I bake, starchy and refined sugar carbs have been absent from my plate. Today I decided that I deserved an out of the ordinary carb loaded breakfast treat.
A Nutella and Banana Sourdough Bread Panini hit the spot. I made it with the intention of only eating half. Yeah right! That bad boy went down smooth and easy, I even had a half cup of coffee. I hardly ever drink coffee but even that tasted good. My craving could have very well come from the monotony of my daily menu, but I like to think of it as I can have whatever I want whenever I want it. That’s my story and I’m sticking to it. There’s nothing fancy or time consuming about putting this yummy sammi together.
Two slices of sourdough bread spread lightly with Nutella and topped with one sliced banana. I sprayed my Panini pan with some non stick cooking spray and very lightly spread one side of the sandwich with butter and put it in the pan. I placed the heavy press on top of the sandwich to smoosh all that yumminess together and let it grill until nicely browned about 3 minutes. Flipped it over and gave the other side a quick spritz with the non stick spray and again let it grill for about 3 minutes. From start to stop was probably 10 minutes. Boy was that good going down!
In an effort to cook more low cal I use non stick spray in my pans. Honestly I don’t view it as all that healthy because it’s artificial. If any of you know of a healthy version of a non stick something or other, please let me know. I absolutely hate non stick pans because I’ve never come across one that worked that well. I off to grade some papers and prepare two separate quizzes for tomorrow. Summertime and the living is easy. Fish are jumping…………………………….
