We have had sooo much dessert around here lately. I’ve seen some to neighbors, family and Charisse has been taking some to work. I’m really going to try (again) to bake more healthier sweet treats. The couple of pounds I can’t get rid of are another reason. With Easter coming soon I know my house is going to be a sugar/fat factory. Since it’s been a couple of days since I posted I wanted to come up with that something that was quick, easy and had minimal servings.
How about ice-cream and cookies? I know, I know, what’s healthy and low fat about that? It’s a smaller portion and there won’t be lots leftover. Hey, I’m taking baby steps here! There’s not set recipe and the possibilities are endless. I lined a ramekins with a couple of tablespoons of crushed Oreos. I elected not to separate the halves and scoop out the cream. Then I filled the ramekins with softened chocolate ice-cream and let them re-freeze in freezer overnight.
To plate/bowl them I put them in the microwave for about seven seconds so they’d come out of the ramekins easily and the plastic wrap would also pull off easily. After they were plated I sprinkle more crushed Oreos at the base of the ice-cream. Not wanting it to be too plain. I topped one with sugar-free, fat-free white chocolate pudding and a bit of raspberry sauce. Tah-dah!! Almost instant dessert. What’s not to love.
