As much as I have tried to wish it so, my dream of eating cake to my hearts desire without weight gain or health risk isn’t coming true. In a matter of days I can tell when I’ve put on weight due to overindulgence in the sugary stuff. Thus begins my experiment.
Over the next couple of months I will experiment with a whole slew of healthier cake recipes. The first batch will use either less sugar, Splenda/Stevia, or a combination of the two. I know I’ve railed against artificial everything. My argument being that when you have something sweet at least make it natural; that way you’re lessening the health risk. I’m convincing myself that this deter is in the name of science and my indulgence will be moderate.
After my assessment as to whether my weight went up, down or stayed the same with the sugar change it’s on to the next test; fat substitution and reduction. Right here and now I’m sticking to my guns and saying: no to margarine, never, ever, ever use margarine. I’ll use less butter, canola, safflower or olive oil.
Refined sugar, brown sugar and all the suspicious chemical alternatives in excess are not good for you. Neither is to much fat in any form. You might say (and you’d be right) that this is my attempt at having my cake and eating it to. Sounds like a sugar addiction doesn’t it. At any rate moderation is the key and not just with desserts. And speaking of moderation. While scanning the first batch of healthier cake recipes I discovered that pan size plays a big part. Or maybe small is the operative word. So many of them are baked in a loaf pan and yield 12-16 servings. Or two eight or nine inch layers that can be described as scanty at best. Can you picture a 12th of a loaf pan? We’re pretty close to paper thin with that one. Of course it’s going to be healthier, there’s not much of it!
This is not to say I’ll never make full sugar/fat/decadent desserts again. There are times when only the traditional will do. And, there’d be a mutiny in the Garth household if I didn’t. I’m also not against modifying some tried and true favorites. I’ve done it before and was pretty much satisfied with the results.
