As I look back on these yummy desserts from Easter I smile with the remembrance of how good they were. I also smile remembering my dear sister-in-law Pauletta. The day before Easter I made a Coconut Layer Cake with Pineapple Filling and took it to her and my brother for their Easter dinner. Pauletta was not up and about but she was smiling and seemed happy to have company. Little did I know that it would be the last time I seen her.
Four the past four years she fought bravely against cancer, diabetes and the heart problems that had plagued her all of her life. When she was able to and often when she wasn’t feeling well, she gave freely of her time. We all know that now she is free from suffering and in a better place. Since Wednesday when I learned of her passing I’ve understandably been out of sorts. Knowing her since I was four she filled many roles in my life. She’s been sister, sister-in-law, mother and friend and she will be missed dearly. My heart also breaks for my brother. They were married for over 50 years. How cool is that!! We will be there for him, their daughter and grands. I can’t fill that void in his life but I can fill him with as many sweets as he likes.
The cookies here were from my basic sugar cookie recipe. This time I deepened the color for the frosting. Gabbi made sure these disappeared quickly.
My soon to be son-in-law and Gabbi dropped some not too subtle hints about Chocolate Cake and who am I to deny anyone Chocolate Cake? Since it was last minute addition to the dessert roster I used a boxed mix. The Buttercream is from scratch. The two layers were filled and frosted with chocolate Buttercream. After I sliced the domes from the top of the layers I crumbled some of it and pressed them onto the sides of the cake. The chocolate decorations on top are melted chocolate that I poured into candy molds. I think it made for a nice presentation. What do you think?
I addition to tableware I have a tough time resisting cake pans when they’re on sale. These half ball cakelets are strawberry with strawberry slices inside. I covered them in a white candy coating them drizzled them with chocolate along with some frosting leftover from the cookies.
