This is one of the cakes I made for my neighbor’s skincare party. She requested just a pound cake so that means I had carte blanche. With the opportunity to release the Cracken of Cake creativity I chose an Eagle Brand Pound Cake. Partly because I’ve had the recipe for a while and was very curious about it. In retrospect I wish I had chose something with a bit more Wow, ya know what I mean? At any rate, the party guests gave it great reviews and the slices I swiped for home went over well. The best news, I got it out of my system. Onward and Upward I say!!!
1 pound butter, unsalted and softened
2 cups sugar
Pinch of salt
3 cups flour
1 can Eagle Brand condensed milk
2 tsp vanilla
Cream butter and sugar; add eggs one at a time, beating well after each addition. Add flour alternately with milk. Stir in vanilla. Bake approximately 1-1/2 hours in a well-greased and floured tube pan at 300 to 325°.
Here’s a little lagniappe (creole word that means a little something extra)
I found this tip at Frugal FamiliesTo make your sweetened condensed milk, you’ll need boiling water, non-fat dry (powdered) milk, sugar, butter and vanilla. You’ll also need a blender to mix it all up. In the blender, place 1/2 of boiling water. To the water, add 1 cup of nonfat dry (powdered) milk, 2/3 cup of granulated sugar, 3 tablespoons of melted butter and a couple of drops of vanilla. Put the top on the blender and blend the mixture on high speed for about 30 seconds or until everything is smooth. There you go. The homemade sweetened condensed milk is also good in coffee.
