Happy Easter and Happy Cake Slice Bakers Reveal Day!
Our selection this month from Carole Walter’s Great Cakes is the Coconut Layer Cake. How appropriate for our Easter Dessert. This is one cake that I was really looking forward to. When I was growing up this was the one cake that I could count on for Easter. As I’ve mentioned in previous posts, my mom didn’t bake lots of cakes but this one was a staple and there was always a pineapple filling between the layers.
This cake has coconut baked in the layers and then it’s covered in coconut as well. The Quick Buttercream Frosting starts with a béchamel sauce and it is light as can be. I’ve made this before and should have remembered that if I wasn’t going to use the sauce right away it should be covered. Why you ask? If it sits uncovered it will form a skim and it did. I was able to save it by giving it a couple of pulses in the food processor. Also because I didn’t make my frosting right away I had to use powdered sugar instead of granulated. Thankfully I did remember that or else I would have had to start all over again. By the béchamel being room temperature, the granulated sugar would not have dissolved and who likes a grainy frosting.
