In addition to that scrumptious Chocoflan Bundt Cake we had for Cinco de Mayo there were lots of savories on the menu. Granted the Mr and I were the only ones in attendance for this chow down, but such is the life of someone who always cooks too much. One of these days I’ll get a handle on cooking for two, maybe.
How does this sound? Tacos with corn and flour tortillas, Spanish Rice and Refried Beans, Chicken Fajitas. Pulled Pork Cupcakes, and Sangria. Yep, I’ll be wearing this menu around the old midsection for a couple of days. At least I won’t have to cook for a while.
For the Pulled Pork Cupcakes I used boneless country ribs and cooked them in the crockpot with onions, peppers and lots of traditional Mexican seasonings. The cupcakes are a standard cornbread recipe found on the back of the bag. I’ve tried several brands and they’re all pretty much the same. I baked them in a muffin tin, no papers just a good spritz of nonstick spray. After they baked and cooled I scooped out part of the top and filled it with the pork. Then topped it with some salsa and a bit of sliced jalapeno. Mighty tasty!
