This has been a never ending party hasn’t it? The last ultra yummy treat that I’m sharing from the party is cake truffles. Back in May when I baked the wrong shaped cakes? Well those puppies had a long life tucked away in my freezer. The last one standing, or should I say chillin was a 14” round white layer. This lovely layer gave it’s life to be made into cake truffles for my party. The sad part is that I only used half of the layer and then *gasp* through the rest away. A moment of silence please…..Ok, so I crumbled the cake and mixed it with about a third of a tub of Cream Cheese frosting. Rolled them into balls and let them chill overnight in the fridge. The next day I melted a bag of Wilton Chocolate Candy Melts. I used the Wilton Electric Chocolate Melter .
The Candy Melts can be melted in the microwave or a double boiler, however the electric melter makes the job super easy. What’s not easy is dipping those suckers. Samara has them down pat, but I struggle to get a smooth and even coating. After my rendition of a smooth coating I sprinkled some with gold sanding sugar and some with purple. I was aiming to stay in the party color scheme, but I should have used the colored sugar on the white coating. So much for planning ahead right?
Also stashed in my freezer were some chocolate cake tops that I sliced from a previous cake that also were called into service as Chocolate Cake Truffles. I also mixed the Cream Cheese Frosting with these as well. Before I forget, I use approximately 8 cups of crumbled cake to a third can of frosting. I would rather have them slightly drier because they hold together better that way. The Chocolate Truffles were rolled in White Candy Melts and topped with White Sprinkles. They certainly as pretty as I wanted them to be, but they sure were good. Cake truffles are addicting and once you start eating them it’s hard to stop. Luckily I had a baby shower to attend the next day and I took the rest with me.
I thoroughly enjoyed treating the ladies and as you’ve seen we ate very well. The next soiree is scheduled for December and the wheels are turning already. Thank you for hanging in here with me.
