These Blueberry Almond Chocolate Clusters are a quick way to satisfy your chocolate, sweet and salty cravings. A few weeks back I saw a version of these at Delish and instantly knew I had to have them. The recipe below is my adaptation.
Helpful Hints for Making Blueberry Almond Chocolate Clusters
If your melted chocolate is too thick, add a ½ tsp at a time of coconut oil or any other flavorless oil. The added oil also helps the chocolate to melt smoothly and remain softer.
I didn’t use any oil and my chocolate was just fine. I would recommend that you store these clusters in the fridge. Fresh blueberries can get super soft if left at room temp for too long, especially if the ambient temperature is warm.
I lined a baking sheet with a silpat and melted the chocolate in a piping bag. Neither of these is an absolute necessity. Adding a dollop of chocolate with a spoon onto parchment or waxed paper is just as efficient as using a piping bag. Use what you have on hand and what works for you.
In one bite, you get the sweetness of the chocolate with the salt. Combine that with the pop of the fresh blueberries and all is right with the world. Not really but you get the idea. I like to consider these little bite size treats of yumminess to be kinda, sorta, healthy. No butter, a minimal amount of sugar in the semi-sweet chocolate, plus plump, ripe blueberries. It doesn’t get much better than this.
Blueberry Almond Chocolate Clusters
6 oz semi-sweet chocolate, finely chopped
1 cup blueberries
1/3 cup sliced almonds
Fleur de Sel for garnish (optional)
Line a baking sheet with a silpat or parchment paper and set aside. Next place the finely chopped chocolate in a small microwavable bowl and heat in 35-second increments until melted, stirring often.
Pipe or spoon a small dollop of chocolate on the lined baking sheet and top with a few blueberries. Drizzle chocolate over blueberries and sprinkle with almonds and sea salt.
Refrigerate or freeze until set, 10-15 minutes and store any leftovers in the refrigerator.
My recipe yield was 1 dozen.
