The book chosen by the Cake Slice Bakers to bake from for the next year is Great Cakes by Carole Walter. There are lots of tasty recipes in this book that caught my eye. Sadly, there aren’t very many pictures, but I’ll get over it. Ms. Walters Applesauce Spice Cake is our first baking project and it was pretty good. I have to confess though that I felt like I should have had on a bonnet and a big skirt, petticoat and all. The recipe feels/felt very rustic and old fashioned.
This cake (at least mine) isn’t dazzling in appearance. I was leary of using a fancier pan although I could have used a smaller pan to get more height. That being said, I can’t think of a better fall flavored cake than this one. The apples and applesauce add moisture, the spices are a tad blaring and the crunch of the nuts was welcomed. It will be hard to part with my Applesauce Spice Cake, but I’m sending it to work with my daughter tonight. Pioneer Sandy would have to do a ton of chores the old fashioned way to even begin working off the calories.
