The Cake Slice Bakers reveal day is the 20th of each month. For me it’s kind of like Christmas in the sense that I know it’s coming but somehow I’m always rushing to get things done. For the rest of our baking year we have four options to choose from rather than all of us baking the same selection. Carole Walter’s Great Cakes recipes have proved to be a bit challenging and that’s why I wavered between the choices this month.
My original choice was the Bing Cherry Kuchen but I knew no one would eat it but me. Then I asked Mr. Sweets which one he wanted knowing full well he would say the Lemon Streusel Torte. Once I read the directions I knew this one wasn’t happening. Making the genoise is such a long drawn out process. Adding 3 cups of flour two tablespoons at a time wasn’t for me, at least not this month. So I went with Absolutely the Best Yellow Cake and wouldn’t you know it I ended up adding the sugar one tablespoon at a time.
Is it absolutely the best yellow cake…..no, but it’s in the running. This cake was baked in a 10” tube pan and didn’t call for any frosting or adornments. You’d think that in the interest of simplicity and easy peasy steps and would have left well enough alone. Ha!!
I split the cake into three layers; no easy feat let me tell you. Then I filled it improvised the filling and topping for the Lemon Streusel Torte. Yeah I know. After all the work that went into this cake I couldn’t wait to get the picture taking out of the way so I could taste it. After the first bite I knew that I had to get the cake out of the house. It wasn’t the best yellow cake but with all the other components it was a hit. The Mr. liked it as well and that’s always a good sign.
Will someone pluheeze come and get this cake so I don’t eat it!!!
